Dreamsicle Cupcakes August 20, 2009

I love Wednesdays. I don’t go to work and I am okay with that. Most people take time off work to get stuff done around the house, run errands, go to doctors appointment, etc. But me? I go sew. And I love it.

Yesterday I made some cupcakes to take with me to my sewing group. We are all about celebrating birthdays, the return of someone that has been gone for a while, Wednesdays. We aren’t a picky bunch when it comes to having a party. These cupcakes were for a birthday and they turned out even better than I had hoped.

Busy, Busy, Busy August 19, 2009

Things have been busy around here. This weekend I was working on the quilt I started a few weeks ago. I had finished sewing on the spinning stars and was ready for the next step.

Instructions for spinning stars.
Take two pieces of fabric (right sides together) and sew along the dotted lines of paper. Then cut on the solid lines…

After removing all the paper from the 1024 half square triangles, pressing them open and some time (lots of time) piecing the blocks together, they are ready to take their place.

There were a few blocks missing. "Eaten" by the dogs... sewing machine feed dogs. :)

On Sunday Paul and I went to Joyce, Brett and BB’s house. BB is their bird aka Bilbo Baggins.

We had lots of fun eating and chatting. Joyce made a delicious chicken and shrimp coconut milk dish.

Raspberry Summer Sensation

Total Time:

Makes:
12 servings
What You Need!
1 pt. (2 cups) raspberry sorbet, softened
1 cup cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 cup raspberries
Make It!

LINE 9×5-inch loaf pan with foil. Spoon sorbet into prepared pan; freeze 10 min.

BEAT milk and pudding mix in large bowl with whisk 2 min. or until well blended. Gently stir in COOL WHIP; spread over sorbet in pan.

FREEZE 3 hours or until firm. To unmold, invert pan onto plate; remove foil. Let stand 10 to 15 min. to soften slightly before slicing to serve. Serve topped with the raspberries. Store leftovers in freezer.

 

Angel Food Cake August 15, 2009

The summer is full of delicious fruits. Cherries, peaches (my husband’s favorite), grapes, strawberries, blueberries, raspberries, pineapple and the list goes on. I try and take every opportunity to consume as much of them as possible.

Today I made an angel food cake. I must confess it was from a box. I have made angel food cake from scratch. But have decided the half dozen eggs, you only use the white for, is a bit much when you can get a box for the same cost or less and it is a little easier to make. Don’t worry, pre-made angel food cakes are not my thing.

Blueberry Muffins with Cinnamon Streusel

So I made Blueberry Muffins with Cinnamon Streusel

Blueberry Muffins with Cinnamon Streusel
Makes 7 muffins

Muffin batter:
1 1/2 cups all-purpose flour
1/2 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup vegetable oil
1 egg
1/3 cup milk
1/2 teaspoon vanilla extract
Zest of 1 small lemon
1 cup fresh blueberries

Crumb topping:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, melted
1 1/2 teaspoons ground cinnamon

Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.

In a large bowl whisk together the flour, sugar, salt and baking powder.

In a separate bowl mix vegetable oil, the egg and milk, vanilla extract, and lemon zest. Combine well. Incorporate the wet ingredients into the dry ingredients. Do not over mix, the batter will be thick and slightly lumpy. Fold in blueberries. Fill muffin cups to the top.

To make the crumb topping by mixing the sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes or until done.

 

Baking, Quilting, Scrapbooking and a Movie August 9, 2009

This weekend has been filled with some of my favorite things!

I went to a baby shower on Saturday. So Friday night, I made frosting and chocolate chip cupcakes.

Saturday evening I went to the local scrapbooking store and scrapbooked with a friend. I updated a simple album I keep of the cakes I decorate and then I made a few cards.

I got this idea from a blog, but I can't remember whose!

If I make cards ahead of time, to have ready for an event, I don’t usually put a sentiment on the front until I know the final purpose.

Lately, I have had creative block to scrapbooking other photos besides my cake creations. I think I need to get all my photos a little more organized, and that might help. That will be another project for another weekend.

Yesterday and today I have also been quilting. I have been working on the quilt I started the other day. New pictures to come soon.

I almost forgot… My husband took me to see the new movie, Julie & Julia. It was fabulous! I laughed a lot. I am sad I hadn’t read the book before hand, but I do plan to still read it. It was very inspiring… but no, I will not be cooking through the cookbook in the next year. I might however, try some new recipes. Harder recipes!

Pie Baking Contest

Today, I am entering my first pie baking contest and I am kind of excited. I am a bit surprised it has taken me this long be a contestant, but in Los Angeles, the opportunities weren’t as frequent as I am sure they will be here in Katy. I don’t have any unrealistic ideas that I will win, but I would be happy if I did. I do love to bake and I’m always up for a challenge.

My first thought was to make a lemon meringue pie. But with the humidity what it is here (lots of it!) and after a discussion with my sister, I decided not to do that. Besides, why go through all the effort and time to bake such an elaborate dessert and not get to sample any of it. So I went with what was in season. Blueberries.

I got the recipe for the filling from Baking:From My Home to Yours by Dorie Greenspan. Blueberries, sugar, flour, lemon zest and a little lemon juice. I decided not to follow the crust recipe and used a family recipe from my Grandma Ruby. I wanted to bring my “A” game, so for the first time, I tried my hand at a lattice top.

Now you might think I stopped there. But no. I couldn’t resist the rhubarb calling to me at the store. So I made a strawberry rhubarb pie as well.

I can not take credit for the idea. I first saw Pie pops on Luxirare last week. I thought they were cute, but didn’t entertain the idea of making them until this week while trying to figure out what pie to make for the bake off and I saw them on Bakerella. I knew that is what I had to make.

As far as I know, there are no categories for this contest, so I hoping I can be a new category of cuteness and win!
